Day Two

I survived day one! I was definitely tempted more than I thought I would be, but I overcame my cravings and stuck to the program. I can tell I will need to plan a little better for each meal, as yesterday I ate a lot of eggs. I had them for breakfast and then again for dinner, more because I wasn't starving and didn't want to have to cook any meat. I am waiting on a shipment of beef (steaks, ground, etc.) and I all have in the house is chicken and eggs.

I also had a bunch of snacks: pecans, grapes, and tangerines. I was able to hit up Trader Joe's over the weekend and grab some convenience foods, so I also tried a bite of banana chips (amazing, just like potato chips!) and freeze dried mango (not so excited about this astronaut food).

Today I had a salad for breakfast, which I know sounds weird, but was actually good. I tried my hand at a new dressing consisting of brown mustard, lemon juice, white vinegar, sea salt and olive oil. It was FABULOUS! I just threw it on some romaine lettuce and added some grilled chicken. Lunch was eggs again, but I have been snacking all day on nuts and fruits.

No pics for today yet, but tonight I am heading over to my fab friend's (Megan's) house and she has promised a yummy paleo tuna dish! I will post pics of that tomorrow.

  2. I actually made it up...just kept tossing stuff in until the consistency looked right. :)
